Ingredients
  1. Butter for ramekins
  2. 3/4 cup 60 - 72% cacao chocolate/choc. chips (5 oz/142g)
  3. 1 stick (4 ounces) butter (salted or unsalted; add a pinch of salt if unsalted)
  4. 2 large eggs
  5. 3/4 cup superfine sugar
  6. 3 tablespoons all-purpose flour (substitute almond or other GF in same quantity)
  7. 1/4 cup semisweet (over 46% cacao) chocolate chips (1.67 oz/47g)
Instructions
  1. Place baking sheet in an oven preheated to 400°. Butter well, four 2/3-cup ramekins and set aside.
  2. Using a microwave oven or double boiler, melt together the ¾ C chocolate and the butter. Set aside to cool.
  3. In a separate bowl, combine eggs, sugar and beat until light yellow; add flour. Add cooled chocolate mixture, and mix until blended. Fold in ¼ C chocolate chips.
  4. Divide mixture evenly among ramekins and place on baking sheet.
  5. Bake until tops are shiny, cracking and chocolate beneath is hot and gooey, about 20 minutes.
Notes
  1. Serve with ramekins on plates as they will be quite hot.
